I made some homemade pad Thai for me and the moms last night. Nothing special, but it was good. And she never had pad Thai before, so double bonus.

This weeks menus:
Monday - pan fried garlic and soy marinated pork chops with green salad
Tueday - ginger glazed mahi mahi with steamed brocolli and green salad
Wednesday - leftovers
Thursday - Coconut chicken soup using turkey left over from the holidays
Friday - Italian sausage stir fry
Saturday - BBQ'D sirloin tip roast with roasted veggies
Sunday - Coconut crusted salmon, green salad and steamed veggies

Citrus shrimp with rice. Has poblano peppers, red onions, garlic. Sauce is fresh squeezed lemon and orange with the zest as well.

I LOVE french onion soup! I make mine with a little red wine in it and lots of Vidalia onions. (sucks that I can't get vidalias this time of year)

We bicker about red vs. white wine, I (white) lose. We always add Worcestershire and Tabasco. Vidalias, soon, but I'm off all sweet onions, they've gotten so freaking sweet in the past 10 or years.

Israeli couscous with Italian sausage, mushrooms, onions, fresh garlic, and fresh oregano. Topped with spinach. Turned out really good.

From the salad bar (and it kicked my ass). The only homemade thing is the dressing.

Barley and brussel sprouts salad. Has red onions, arugula, dried cranberries, and feta cheese. Dressing is a little bit of balsamic vinegar, honey, and olive oil.

I'm thankful that my husband loves brussel sprouts! My dog does too!
