Last night I was by myself so I made a salad from my Company's Coming cookbook - romaine, cukes, tomatoes, red onion, black beans and avocado tossed with a home made jalapeno dressing. I am having more for lunch today!!!

Tonight I am going to be by myself again so I am making something hubby doesn't like - coconut crusted chicken breasts with mango mint salsa. It's from Chef Michael Smith and is TO DIE for.

Ask and ye shall receive

Jalepeno Dressing
1/4 cup Extra Virgin Olive Oil
3 Tbsp Lemon juice
1 1/2 Tbsp Chopped jalapeno pepper, seeds and ribs removed
1 1/2 Tbsp chopped fresh cilantro
1 Tbsp Liquid honey
1/4-1/2 Tsp Chili powder

Process ingredients in blender until smooth (I actually just chopped the jalapeno and cilantro finely and shook everything together in my salad dressing making bottle). Makes about 1/3 of a cup of Dressing.
Note: wear gloves when chopping jalapeno peppers and avoid touching your eyes.

No joke. I learned that the hard way the first time I worked with peppers. I did all my chopping, had dinner, and later went to get ready for bed. When I went to take my contacts out I felt a pretty good twinge from the capsaicin but didn't think a whole lot about it. Weeellllll the next morning when I put my contacts in.... Holy mother of God!!! The capsaicin - a lot of it - had stuck to the contacts. Once I figured that out my eyes were swollen to the point that I had to pry my contacts out but the damage was done - it was in my eyes. I walked around crying for half the day.

yea, cept i ate too much steak, and i think husband will eat too much cake..lol.

well its how you celebrate the days not the perfection of getting to right...well its nice out, time to go smoke and drink some red bull.

I just threw in a bone in ham! Yum! I'll make potatoes of some sort, corn and salad with the ham.

That means tomorrow I make homemade black bean soup. Even better! Homemade buns go great with this soup. Kids will have a honey white bread bun and I make 100% whole wheat for hubs and I. Big cooking day tomorrow.(will take all day)

Cedar plank salmon done on the big green egg, wild rice, green beans. Another one of my favs.
