Chicken stir fry ....and I'm attempting rice again. I've yet to perfect rice. Why on earth is this hard for me to get? Anyone with good rice-cooking tips, I'm all ears. I follow the instructions, I give it my best shot, and most of the time it's borderline gluggy. Which means I'll pile more veggies on top of it as a form of denial.

Simple Steamed Rice

2 cups long grain rice

1. Measure the rice into a large saucepan (one that has a good fitting lid). Add water to cover, stirring with your hands until the water becomes cloudy. Carefully pour the water from the saucepan, making sure the rice stays in the pan. Repeat, covering rice with water, rinsing, and pouring water from the pan, until the water is more or less clear when rice is stirred, 5 to 6 rinses.

2. Add 3 cups of water to the rinsed and drained rice; cover and bring to a boil. Reduce the heat and simmer for 15 minutes. Remove from the heat and let the rice stand, covered, 10 to 15 minutes longer.

I tried quinoa once, but didn't care for it. I need to try it again sometime, maybe with a better recipe.

I like it too... Hubs isn't a fan so I haven't made it. I had a pumpkin and quinoa recipe that looks good. He doesn't like pumpkin either (unless it's in a pie), so I'll forgo that recipe.

The way I cook rice hasn't failed me...yet.

For every one cup rice use 2 cups of water

Example: 2 cups rice/ 4 cups water

Place water in a pot, heat till boiling (you can choose to add a seasoning of your choice)

Add rice to boiling water turn down heat until water is simmering and cover for 20 min. and Voila! Done.

Thanks! I shall look to both posts about this...they are similar.

I ended up making pizza lol. We went for a jog around the track and by the time I got home the dish I had in mind just felt too hard. We had a couple of locally-made pizza bases in, so just added some toppings and put in the oven.
