I did the maple mustard glaze, used whole grain mustard for it, spooned it over after browning, then covered and roasted. After I took it out of the oven I reduced the sauce and poured it over the sliced pork.

MMMMMMMMMMMMMMMMMMMMMMMMmmmmmmmmm yummy!!

Just slow-smoke that "bad boy" on a spit with Texas mesquite for several hours and you'll absolutely have yourself something that'll bring sheer tears of joy to your eyes!
