It sounds delicious and I'm going to have the wife suggest to my
daughters that they get me a smoker for Father's Day.

1 cup real maple syrup
4 tablespoons prepared Dijon-style mustard
2 1/2 tablespoons cider vinegar
2 1/2 tablespoons soy sauce
Dean if I may I would suggest a Vertical Smoker. Out of all the smokers I have had they are the easiest to cook with. Make sure that you buy one with a vented coal pan if a charcoal smoker is the way you want to go. ( the only way IMO lol)

This is the first recipe I have seen that calls for the pork to not be over cooked at
160 but pull it out of the oven at 145 degrees. It should be much more juicy.
That's going on my to cook list too. We have a freezer full of loins.
How about giving me a brand. I think I know what your talking about with the vertical one.
ATM I'm using a cheap $60 one I picked up at Lowes. Works great. It's called a Master Forge I believe. Had a expensive one that would not hold a temp. It would constantly go out. This will sound silly but.... if for some reason you want to get the temp up on this smoker just point a leaf blower at the bottom. It will stoke the coals without having to open it up.
