For me it's all about location. If you're going to Vegas there are some really great spots that you can drive to for a view, if you want to walk/hike a bit there are even better views, and if you're into rock climbing, well....
So my vote is a spork and the grocery store deli.
Along with a cooler with ice and favorite beverages for tailgating (drinking out of the large bottle is always fun), or bouldering a high rock with a beer in hand, sitting atop and waiting until you're sober to come down. So if I were going, I'd head for the hills or the desert. That would be desert, not dessert, but you can certainly combine the two.
You can take the money you save from picnics and put it towards a fine dining experience. When in Vegas Rain Forest Cafe and Excalibur make for fun dining events.
If you pull an all-nighter, get some coffee and cinnamon rolls from Starbucks and head out to watch the sun rise.
