Crepes

2 eggs
1/2 C milk
1/2 C water
1/4 tsp salt
2 Tbsp melted butter
1/4 C sugar
1/2 tsp vanilla
1Tbsp lemon juice
1 C flour

In blender, combine all ingredients EXCEPT flour. Once combined, add flour, blending just until smooth.

Use immediately, or refrigerate over night.

To cook, heat a pan or crepe pan between Medium and High. Oil pan, pour in a small amount of batter, about 3 Tbsp and swirl pan to coat bottom with batter. When edges brown and lift slightly, flip. it will take a couple to get the feel for it.

Makes about 10 crepes.

Filling:

12oz cream cheese
1/2 C powder sugar
1 C whip cream

Mix together thoroughly


Hot Caramel Sauce

1/2 C butter
1 C brown sugar
1/2 tsp salt
1 tsp vanilla
1/2 C evaporated milk

Melt butter/sugar/salt in saucepan, bring to boil.

Remove from heat, whisk in vanilla & evaporated milk. Might be nice with a bit of brandy mixed in, just sayin'......
