Re: Recepies... to go along with the "whats for dinner" thread.

This is the flan recipe I use. It's from the blog "MomI'mHungry", which is not my blog.

Coconut Flan
adapted from allrecipes

1 cup white sugar
4 eggs
1 (14 ounce) can sweetened condensed milk
1 (14 fluid ounce) coconut milk
1 tablespoon vanilla extract

Preheat oven to 350'.
In a medium saucepan over medium-low heat, melt sugar until liquefied and golden in color. Carefully pour hot syrup into a 9 inch round glass baking dish, turning the dish to evenly coat the bottom and sides. Set aside.
In a large bowl, beat eggs. Beat in condensed milk, coconut milk and vanilla until smooth. Pour egg mixture into baking dish. Cover with sprayed aluminum foil. Place flan dish in a large roasting pan and fill with water half way up flan dish (water bath).
Bake in preheated oven 60 minutes. Let cool completely.
To serve, carefully invert on serving plate with edges when completely cool.

Pot Roast

about a 3 1/2 lb. chuck roast

Mix 1 packet onion soup mix, 1 packet ranch dressing, i packet brown gravy mix together in a bowl DRY.

Put pot roast in crock pot, pour 1 cup water, take the dry mix and spread it over the top of the roast.

Cook 6-7 hours on LOW. It is freaking delicious. We eat it with white rice.

You don not have to brown the roast first. Sometimes I flip it half way through, but you don't have to.

Sounds great! I'll have to look up chuck roast on an American English/British English translation site.

Cornbread. And not nasty sugary cornbread either. Mexican cornbread. With cheese. And green chiles. And creamed corn.

Sugar in your cornbread is good for a beating in my house.
